Today is Courtney’s Friday so you know what that means? Daddy’s coming home! This week he was gone for 5 days. Oh, the life of a pilot wife! I️ myself dealt with the inconsistencies in my schedule when I️ was flying, but it’s so different when you have kids. After you have kids so much changes, making Courtney dinner is one of the ways I make sure we can stay close.
I️ usually like to cook on the days he comes home. He’s been eating airport food and fast food all week so this gives him something to look forward to. I’m going to be honest with you all when Courtney isn’t home I put very little effort into our meals.
I’m Panamanian so if I cook what I know I’m just going to make rice, meat, and plantains. So I decided to go to Pinterest to find something good. It’s been raining and cold these past few days so I was in the mood for some comfort food.
I decided I wanted chili and found a recipe by Bakerita. Santana has been really picky about his food lately, those “pre-terrible two’s” I was telling you about, but who doesn’t like chili?! So I’️m gonna give it a try.
After purchasing all of the ingredients I came home to get started. The first thing I always do before starting any meal for my hubby is pour myself some champs and turn on some music. Courtney and I love music and food so these will be recurrent themes in our life. After all of the prep was done the rest was easy peasy.
I have to say, after simmering for a few hours my chili came out yummy! The recipe made a ton of chili so we will be eating it for the next few days. I ate mine with corn bread and Courtney with rice. My family is happy and fed. Now we can finish the rest of this champs and relax.
Marriage after baby can be challenging, so making dinner for Courtney when he comes home is so important to our family. He works hard so that Santana and I can enjoy the life we live.
